Sweet Potatoes in Ginger Pandan Soup
- 1 medium sweet potato, about 300 - 400 gram, peeled, cut into wedges- 2 pandan leaves, knotted- 2 inch ginger, bruised- 1/4 cup sugar- 2 cup water
1. Place all ingredients in a sauce pot and bring to a boil.2. Lower the heat to a simmer, cover, and cook for another 10-15 minutes, or until sweet potatoes are easily pierced with a sharp knife.3. Turn off heat, remove pandan leaves and ginger. Transfer to serving bowls, serve hot.
